Double Chocolate Pancakes
Ingredients
- 1 Packet Pancake Mix
- 2 tbsp Pasture-Raised Eggs
- 1/4 cup Mini Semi-Sweet Chocolate Chips
- 2 oz Crème Fraîche
- 1/2 oz Salted Butter
- 2 oz Chocolate Chips
- 1 tbsp Powdered Sugar
Instructions

Mix the batter
In a bowl, whisk the pancake mix and 1/3 cup of water until smooth. Add the eggs and whisk to combine.

Make the pancakes
In a large nonstick pan, heat a drizzle of oil on medium heat. Working in batches, scoop the batter into the pan to make 4 to 6 pancakes. Cook 2 to 3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook 1 to 2 minutes, or until lightly browned. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining batter.

Finish & serve
Meanwhile, in a bowl, whisk the crème fraîche, cherry spread, and a pinch of salt until smooth. Serve the finished pancakes topped with the cherry spread and powdered sugar. Enjoy!
