From your pantry: Olive Oil, Salt, Pepper

Instructions

  1. Prepare the ingredients & make the dressing

    Wash and dry the fresh produce. Halve the cucumber(s) lengthwise; then thinly slice crosswise. Quarter and deseed the lemon(s). In a bowl, whisk together the garlic-tahini sauce, garlic paste, honey, the juice of 2 lemon wedges, half the parmesan, and a drizzle of olive oil; season with salt and pepper.

  2. Cook the chicken

    Pat the chicken dry with paper towels. Place in a bowl. Season with salt, pepper, and the spice blend. Toss to coat. In a medium nonstick pan (or large for 4 servings), heat a drizzle of olive oil on medium-high until hot. Add the seasoned chicken in an even layer. Cook, without stirring, 3 to 4 minutes, or until lightly browned. Continue to cook, stirring occasionally, 3 to 4 minutes, or until browned and cooked through. Turn off the heat.

  3. Make the salad & serve your dish

    Meanwhile, cut a 1-inch vent in the package of farro. Microwave on high 1 to 2 minutes, or until heated through. Transfer to a large bowl; drizzle with olive oil and season with salt and pepper. Add the arugula, sliced cucumber(s), and dressing. Toss to combine. Taste, then season with salt and pepper if desired. Serve the salad topped with the cooked chicken. Garnish with the remaining parmesan and peppers. Serve the remaining lemon wedges on the side. Enjoy!

  1. Cook the shrimp
